My husband annually surprises me with fresh blueberries asking me to make this pie. It has become some of a tradition and I was pleasantly surprised when my picture was discovered and asked to be published here and nowI hav e enclosed the recipe for anyone interested to enjoy!
Husbands annual blueberrysurprise-pie
Piecrust:
150 g butter
1½ dl caster
sugar
1 egg
3 dl plain
wheat flour
1 tsp
bakingpowder
2 tsp ground
cardamon
1 tsp vanilla
sugar
½ dl milk
Filling:
1 I
blueberries
1½ dl
castersugar
1 tbs potato
starch
On top:
Confectioner’s
sugar
Vanilla
cream:
3 dl whipping
cream
1 tsp vanilla
sugar
Mix
soft butter with the sugar. Add the egg and the dry ingredients and stir in the
milk as last. Use a 27 cm wide pie dish to make the crust, using a little more
flour on your hands as aid if needed to make the dough more manageable. Mix the
blueberries, sugar and potato starch for the filling and pour it on top of the
piecrust. Bake the pie in 200 degrees Celsius for about 30 mins. Let the pie
cool dpwn for a little while and sprinkle some confectioner’s sugar with a
sieve on top of it. Add vanilla-sugar to the whipping cream before whipping it
and serve with the blueberrypie.
Note:The pie
is at its’ best when made out of fresh blueberries but if not obtained frozen
ones are okay. Vanilla-essence can be used instead of the vanilla-sugar, using
half of the amount mentioned above. The crust is best made of real butter but
in order to reduce calories you may use margarine or shortening and skimmed
milk instead of full fat with the same amount as mentioned above.
