inspired by elvis presley, made for the anniversary of his death in celebration of his life.
Vegan banana cupcakes with chocolate peanut butter frosting
preheat oven to 350*. these cook for 15 minutes.
banana cupcakes:
3/4 cup sugar. 5 tbsp vegan butter, 1 tsp vanilla. 1 banana - mashed. 1 1/4 cups flour. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup soy milk
combine sugar butter and vanilla, mix well then add mashed banana. combine remaining dry ingredients, alternate pouring in dry ingredients and soy milk while mixing.
frosting
1 cup creamy peanut butter ( i used Dark Chocolate Dreams from Peanut Butter & co. If you use regular peanut butter also add in 1/4 cup cocoa powder.)
1/2 cup vegan margarine OR vegan shortening which holds up better. I use Spectrum brand, it's transfat free and organic, Earth Balance also makes a good one.
2 cups powdered sugar
1/2 tsp vanilla
3 tbsp soy milk or more depending on the thickness of your peanut butter.
add all and beat until creamy.
after frosting the cupcakes i put them in the freezer for 30 minutes because it was a hot day. they were wonderful.
