Veganized cupcakes

We bought an organic cake mix and matching icing mix. Instead of using eggs & butter as it asked we used soy milk & soy margarine. They turned out really yummy and not very funky tasting as some vegan stuff can be. I put them in a cake case to try to keep them fresh and the icing got little dots in it, not sure why. Next time we will make 18 instead of 24 to have a little larger sized cupcakes.
