The specialty cheeses on Philippe Gillot’s Dairy Farm include Fommes Blanc, Yogurt, and St. Flourtine. What impressed me the most was the raw milk. It was like drink unsweetened melted ice cream. It did not taste like cream or whole milk. Raw milk stood in a class of deliciousness all by itself.
