If you're thinking of eating the Easter eggs you're about to colour this weekend, make sure you follow Health Canada's guide to safe food handling and preparation. Here is a list they've preapred so you can colour your eggs and eat them too:
  • Make sure to clean the outside of the eggs you colour, especially if you will eat them later
  • Don't buy unrefrigerated, cracked eggs or if you have them don't use them for colouring
  • Store eggs in the coldest art of the fridge
  • Boiled eggs should be cooled immediately
  • Use non-toxic colouring, if you are eating the eggs

With the exception of the last bit of advice, I think these suggestions are very useful. Happy Easter everyone!

Using tongs to prevent floating, keep eggs in dye for 1 minute for lighter colors or up to 5 minutes for a darker color; adjust tongs periodically so they don't make a mark. Carefully set eggs atop the pins on the drying rack to dry.

Every year, 6,000 to 12,000 cases of salmonella illness are reported across Canada.
