The secret to a really good crust is quite simple and requires three things: 1) a really hot oven (220 ˚C, at least), a hot pan in the bottom shelf of the oven (throw about 100mls of water into it JUST before putting in your loaf) and 3) allowing the bread to cool (to room temperature!) UNcovered. The bread illustrated had a wonderfully sweet, chewy crust. Go for it!
