My understanding is that the type of frog commonly eaten in Croatia is not endangered, in fact Croatia has quite a few frog farms even.
Since there are many, many species of frogs all over the world, in all kinds of countries, with very varying distributions, I would be hesitant to speak on the "extinction" of frogs as a whole solely due to (any regulated) human consumption.
However, illegal poaching is a reality, so if consuming or purchasing any frog product, I would evaluate each case according to the particular situation (species, source, seller, credibility).
Climate and a changing environment seem to be the greatest immediate threat, particularly for species specific to a certain damaged location.
