The enset, aka false banana, plant is a staple crop in Ethiopia. Scraping parts of the the trunk creates a mass of fibrous substance. The scraping separates some fibre (used for other purposes) but the remaining mass still contains some fibre. The mass is buried underground for months, as a result of which it becomes the off-white substance; this is cut again to eliminate any last fibrous parts and then used as flour for a flat bread called kocho
