Vegetarian Thanksgiving Feast

When you don't eat meat, one has to be prepared to answer certain questions. The one I heard over and over again this past week was, "If you don't eat turkey, what will you eat on Thanksgiving?" It's as if everyone thinks that the turkey is the dinner. So for those who ask and want to know what a vegetarian eats for Thanksgiving (or any other holiday) dinner, this is what we had yesterday. Feel free to mouse over the notes for details.

For the record, this was a dinner for 4 people and we ate until we were stuffed. We had so many leftovers that we'll be eating Thanksgiving dinner for several days - just like everyone else.

A Vegetarian Thanksgiving Dinner

We cooked with as many fresh, local, and organic products as possible and consumed absolutely zero animal flesh. Next year our goal is to have a Vegan Thanksgiving Dinner, which we almost had if not for the cheese in our son's mac'n'cheese and the yogurt in our fruit and nut salad.
