Fascinating display.
Sausage? Now they've gone too far.

The FDA in the USA now wants to start allowing certain amounts of listeria in foods, saying there are "normal" amounts. This would stop some foods from being recalled if they had low content of listeria.
The American Meat Institute is behind it.
Maybe they think when they start irradiating all our meat, that would kill the live bacteria..

Opponents of irradiation say that the problem is in the processing and that irradiation is not the answer to meat contamination.

Well, I'm not against irradiation per se, but when it allows dirty operators to continue it's bad. Right now the public is not told which foods are irradiated, but I understand that fresh strawberries and fresh pork are routinely zapped. And what about that instant, already cooked bacon that's in the cellopacks at the grocery? What's keeping it from rotting? I can see a use for it in preserving meat for areas that have no refridgeration. Maybe they just want a use for all that weapons grade plutionium. Ha, ha.
