- Chop 1 mango into medium cubes. (look on Google: How to cut a mango) Be sure to use one that's nice and red, not overripe.
- also chop 1/3 cup of green pepper, and about 1 cup of cherry or grape tomatoes (halved or quartered and a couple tablespoons of sweet vidalia or red onion. The goal is to try to get these about the same size as the mango cubes.
- mince about 1.8 c. each of fresh mint and cilantro.
- Toss these gently in a bowl with a dash of salt & lemon pepper (I'd recommend the kind in the gringer with dried lemon & orange peel) a bit of cumin and a squeeze of lime juice.
- Serve over grilled chicken breasts & salad, or by itself. May be better if refrigerated and left to sit for at least an hour first... but we were hungry!
