o-Toro

Chef surprised me with a small piece of something hidden beneath a few fillets of fish. Highly coveted, these two simple nigiri were o-Toro! Still a little frozen, but rich, buttery and the best I've had in the last while. They tasted sweet and not at all sinewy (which is what I find happens at Kokyo - but that sushi place is one to go for the best bang for the buck - I'm guessing they have chu-Toro). And yes, my surprise was costly...
