Raw Milk Farmhouse Cheddar

My first hard cheese, just out of the press. The curds tasted really different, sweeter and more flavorful than from pasteurized milk. Lovely. Let's see how it ages. I'm going to bandage and lard it rather than wax it, I think, in a few days.
