When Dexter Richardson is not running one of his three Dexter's restaurants in the Orlando area, he is watching birds.

Of the more than 500 species sighted in Florida, Richardson can claim to have seen 350. Florida is well known for its numbers of birds, he says, mainly because of many ocean and shorebirds and the state's role as a migration route.
