So now if we agree that the pagan origin of the Easter symbols in the above observation are correct, then what exactly do the children hunting for the eggs symbolize?

the bunny has nothing to do with the eggs. It is simply a reproduction symbol...Have you ever heard the expression "we f@#%!@ like rabbits? Excuse my french.
