Tofurky frozen vegetarian feast from Turtle Island Foods.

Recipe
This Thanksgiving, I cooked my "roast" using the following recipe (adapted from Turtle Island):
Tofurky Roast
1 Stuffed Tofurky Roast
2 Potatoes, quartered and peeled
2 Large carrots split down the middle and cut into 2" pieces
1 Onion quartered and peeled
(I used baby carrots, held the onion, and just tossed the veggies in my roast pan until it was full.)
Baste
1/2 cup orange juice
1/2 cup soy sauce
4 tablespoons sweetener (brown sugar)
(This is actually x4 the amount of baste recommended by Turtle Island.)
Cooking instructions
1. Carefully remove roast from plastic casing and clips with knife or sharp scissors.
2. Place roast on sheet of tin foil or in casserole dish with tight fitting cover.
3. Surround thawed Stuffed Tofurky Roast with vegetables on tin foil or in covered casserole dish.
4. Whisk Tofurky Baste together.
5. Thoroughly cover roast and veggies with 1/2 of the baste and pour over roast and veggies. (Pictured)
6. Wrap or cover tightly.
7. Cook in preheated oven at 350F for 1 hour 15 minutes.
8. Open foil or casserole and pour remaining baste over roast.
9. Cover and cook for another 10 minutes.
10. Slice with serrated bread knife and serve hot with Tofurky Giblet Gravy.
(My cooking time was closer to 2 1/2 hours. What can I say? I like my food a bit overdone.)
