California is a big producer of artichokes and yet they don't seem to be found in markets in large quantities or available in the many varieties produced. They can be prepared in many different ways and add dirversity to our vegetable selection.  In Italy they can be found in every market and they are a treasured vegetable.

Preserving artichokes is one way of preparing a fast meal on a busy day.

Preserving them is a great way to have them on hand for a variety of cooking uses. I use them in pasta, or as a vegetable side dish, in antispasti, or sautéed, sliced over meat or fish. You can flavor them with your favorite herbs and make them you own special recipe.
