For the rich and famous no party is really stylish without caviar and that has to be of the highest qualty usually Russian rather than American. That could all change if researchers at Washington State University suceed in devising better ways to improve the quality of Californian raised sturgeon eggs - caviar!

Jay-Z and Beyonce had fried chicken and Russian caviar at their rooftop wedding reception - that's style - but maybe soon American caviar will cut the mustard at even the swishest celebrity event.

Researchers at Washington State University are studying the best way to improve the quality of caviar.

WSU Professor Barbara Rasco said the multi-institutional study, sponsored by the Western Regional Aquaculture Consortium, is examining sexual maturity in sturgeon raised by California and Idaho aquaculture farmers. The university is studying white sturgeon.

The goal is to develop better strategies to predict when the fish are ready to reproduce and when the caviar egg quality is at its best.

"We want to make sure when the fish are harvested for caviar, we can get the maximum quality, maximum recovery out of each fish," Rasco said. "Even though it's cultivated, it takes quite a long time for the fish to grow and mature."
