this year i decided to start my Thanksgiving baking/cooking a couple of days early and avoid the stress. amazing. i actually had fun!
i baked cornbread for my cornbread, apple, peacan stuffing. and then baked the stuffing.
i baked two pumpkin pies (mom's recipe, of course)
i tried two new recipes (why not? we're only having 20 people!) ~ key lime pie (pictured here) and pecan pie. i almost skipped the meringue on the key lime thinking i'd just use whipped cream. but i had the egg whites from the filling, so thought what the hell ~ i'll give it a shot (for the first time since i was about 20). it turned out fantastically!!!
o and i made some cranberry relish from scratch, too. it's very yum.
tomorrow won't be as fun. cleaning the house. bummer.
but for now, the feet are up, the fire's glowing (supposed to snow tonight) and the hands are wrapped around a glass of well-earned chard. yay.
