Super Bowl 2012 Recipe: Mexican Mess Dip (Bean Dip)

Super Bowl parties are some of the best parties in terms of atmosphere, fun and of course food. Here's a recipe for Mexican Mess, or otherwise called Bean Dip.


Mexican Mess (Bean Dip)

Ingredients:

1 (16 ounce) can fat-free refried beans

1 cup salsa (I like medium)

4 ounces green chilies

1 cup cheese , shredded (I like a Mexican or taco blend)

1 Green Onion, chopped

1 Red Bell Pepper, chopped

Directions:

  • Spray a pie plate.
  • Except for the green onion and red bell pepper, mix all ingredients and place in pie plate.
  • Bake at 350 degrees for about 15 minutes or hot in the center.
  • Add extra cheese, green onion, and red bell pepper on top.
  • Let cool for 10 minutes and serve.



Mexican Mess isn't a "pretty" dish, but it tastes delicious and adds extra ziiing to tortilla chips and pitas.
