Subway & Dunkin' Donuts: Pizza-Makers?

More than a decade ago, even McDonald's (MCD) tested pizza before tossing in the apron. But with consumer interest in pizza high and pizza-dominated chains' sales lagging, the temptation to roll out the dough is once again peaking.Of all meals eaten at restaurants, 9% now include pizza, reports NPD Group.
"The demographic of pizza eaters is about the same as oxygen breathers," says Steve Green, publisher of PMQ's Pizza Magazine, a trade publication.
Recent pizza growth has been in artisan, take-n'-bake and rising-crust pizzas, Green says. Now, Subway and Dunkin' think faster, smaller pizzas may find a niche.
Subway is dishing out personal-size pizzas at about half its stores nationally, and Dunkin' Donuts is testing personal pizzas at 15 prototype stores in six states.
"Everyone in the industry is keeping an eye on the new entries," says Mandy Detwiler, managing editor at Pizza Today.
Subway's $2.99 thick-crust pizzas arrive frozen.
They're defrosted, then baked in the toaster ovens in about 90 seconds.
Meat toppings are a buck each. Veggies are free.Winograd won't discuss sales but says franchisee feedback "has been positive."
Dunkin', too, is coy about plans.
The test began late last year in a handful of
units and is now in 15 stores. The made-to-order pizzas, at $2.49 to
$2.99, are oven-cooked in about three minutes.
You can't get into pizza-making just for the money. You can only excel at this art if you truly love pizza, and the making thereof.
See, pizza dough cannot be made from a pre-mixed vat of powder, nor from a spreadsheet handed down from corporate. Pizza dough comes from the heart, and from a place deep inside and undefinable- dare I say the soul?
Yes.
The soul.
If I see either of the companies mentioned above lurking in front of my
building trying to hijack my pizza dough recipe, I'll chase them off
with my oven paddle.
(Disclosure: I take fierce pride in my pizza-making skills, spending up to four hours preparing a pair of perfectly-formed pizze. There is no true perfection in this world, but somethings are awfully close...)

Photo contributor flyinsaucier writes, "I did try the pizza one day out of curiosity and it was absolutely wretched. The crust was soggy, the cheese tasted like plastic, and the sauce had an aftertaste that reminded me of household cleaners. All in all I'd say it was a step below the individual bagged pizzas that my high school served."
Dang. That's about as negative a review as is even possible. It's the anti-Academy Award.

I would think your pizza if truly better than the competition would withstand substandard pizza from others. I remember as a kid in 1975 I had my first macDonalds, it was great, but slowly in a decade, playstructures, Birthday rooms and meal a deal toys were offered as enticement instead of good food. Kids pretty much control the purse strings, MacDonalds and other chains know this and target kids instead of adults.
The absolute best pizza I have ever had was Mama Mias in Montreal and Colannade Pizza in Ottawa, and a small pizzeria in Moscow Russia.
The best chinese food bar none is Golden Palace in Ottawa, and Jewish Deli is Swartzs in Montreal, killer smoked meat. All the above have been in business since the 1930, 1950s and do not fear competition, as Colannade Pizza situated along a block and a half of pizzerias all touted the best in the world, Colannade simply stated their PIzza and Italian food was the best on their block, certainly shut the competion up fast and the signs went down,
Vancouver pizza is just not up to snuff, though I like Martinis on Broadway, though not crazy about Wheat thin Crust? What the hell was that all about? Grease and wheat crust?
In ending, quality and passion as you state will win out over crap served by Franchises ,bar none.
Great story, by the way, dammit now I am starving.
