You have to praise someone who Jay Rayner tells us "makes salt from buckets of water lifted from the shore. He uses it to cure pig legs from animals fed on the left-overs from the kitchen, to make his own Serrano-style ham. He makes elderberry sorbet from the tree in the garden.
